Special shout out to my wonderful husband who has been nothing but loving and supportive these past few days. I only cooked him a (very) late lunch yesterday but we've gotten take-out for dinner for a few nights in a row. :-(
But first - this is my inspirational quote for the day:
CrockPot Teriyaki Pork Chops
Ingredients:
o
4 pock chops, about 1” thick
o
2 garlic cloves, minced
o
2 tbsp brown sugar
o
¼ cup soy sauce
o
1/3 cup chicken broth
o
Salt & pepper to taste
Sprinkle salt & pepper on pork chops and place in the bottom of
your crockpot. In a small bowl mix
garlic, brown sugar, soy sauce and chicken broth together and pour over pork
chops. Cook on high for 4-5 hours or on
low for 6-7 hours. If your chops are
not 1” thick, just reduce cooking time.
You can also freeze this (easy ‘gift meal’ to take to a friend/family member who is
ill or maybe just had a baby). Instead of putting everything into the crockpot,
just put it all into a gallon-sized bag and freeze flat. Let thaw overnight in the fridge before
dumping it all in the crockpot to cook. Just remember to write the
cooking time on the bag!
